- 260 Grams Fresh Egg Whites
- 350 Grams Granulated sugar
- Salt Pinch
- 1 lb Soft Butter
- In the bowl of a kitchenaid, whisk the whites, sugar and salt on a double boiler and whisk until the mixture reaches 65-68C.
- Place on a stand mixer with whisk and whisk on high speed until fluffy and barely warm.
- Add the soft butter in 3 parts and whisk on high speed until it comes together.
