Ingredients
  

  • 260 Grams Fresh Egg Whites
  • 350 Grams Granulated sugar
  • Salt Pinch
  • 1 lb Soft Butter

Instructions
 

  • In the bowl of a kitchenaid, whisk the whites, sugar and salt on a double boiler and whisk until the mixture reaches 65-68C.
  • Place on a stand mixer with whisk and whisk on high speed until fluffy and barely warm. 
  • Add the soft butter in 3 parts and whisk on high speed until it comes together.
